I have Origins Mod version 1.7.9 downloaded and would like to Update/Patch to 1.7.9.5.

Is it necessary to Torrent the entire 2.56GB or can I patch?

I've been using DayZ Launcher for Overpoch but have limited experience with mods.

You have to download the entire 2.56GB-Folder and replace it in your ArmA2:OA Folder.

Here you go. And once it is downloaded you take the new @DayzOrigins folder and stick it here C:\Program Files (x86)\Steam\SteamApps\common\ARMA 2 Operation Arrowhead. But make sure to delete the previous Origins folder in the same location before doing so.
